Spring - Zucchini Flan
Ingredients
1 kg grated zucchini
9 whole eggs
2 large onions
2.5 cups cheese (2 different sorts)
2.5 cups self raising flour
50 ml oil
salt and pepper
Method
Preheat the oven to 160˚C. Grate the zucchinis and onions and set aside. Beat
the eggs till pale and fluffy. Combine beaten eggs with grated zucchini and
onion and mix well. Sift flour into the mix; then mix in oil, cheese, salt and
pepper.
Taste and adjust seasoning.
Pour mix into lined and greased 30cm cake tin and bake till
set – approx 30 – 40 min.
Tips:
Cheese - Parmesan and Vintage Cheddar Cheese are good options, but any hard
grating cheeses are good. E.g. Gruyere, Edam, Pecorino, etc
Serve flan warm or cold with salad and a bottle of Annapurna
Estate Pinot Gris or Alfresco.
